Recipe for Gramma Barnes' Sugar Pie
Besides having a sweet Valentine's name, old fashioned sugar pie is easy
to make because it takes so few ingredients. It's a yummy caramel pie,
perfect to eat with a glass of milk, a cup of coffee, or garnished with
whipped cream or vanilla ice cream. Yumm-mmmee, Sugar Pie!
This makes a 9 inch pie:
1 1/2 cups brown sugar
1/4 cup flour
1 1/2 cups evaporated milk (NOT sweetened condensed milk)
unbaked* pie shell
1. Put oven rack in lowest position.
2. Preheat oven to 350°
3. Mix brown sugar and flour
4. Gradually add milk while stirring
5. Pour mixture into pie shell
5. Bake about 1 hour
(Pie is done when a knife tip in the center comes out almost, but not
quite, clean.)
*My great Gramma Barnes made her version with lard crusts. If you keep
frozen pie crust in the freezer, it's even quicker to put together. I make
double batches of standard pie dough, roll enough for a single crust into
balls, flatten them slightly, and freeze in plastic bags until needed.
