Recipe for Chocolate Walnut Fudge Tart

1 cup flour
1/2 cup coarsely processed oat flour
1/4 cup granulated sugar
1/2 cup butter
2 cups walnuts
1/2 cup brown sugar, firmly packed
1/2 cup dark corn syrup
2 eggs
2 tablespoons melted butter
1 cup semi sweet chocolate chips
1 cup heavy cream
2 tablespoons granulated sugar

Preheat oven to 350 deg. In bowl of food processor fitted with steel blade, process 1/2 cup oats pulsing until consistency of coarse meal. Set oats aside. Add nuts to bowl and process by pulsing until coarsely chopped. Set aside. Place flour, oats, granulated sugar and butter in food processor bowl. Process until crumbly. Press mixture onto bottom of 10-inch pie pan. Bake for 15 minutes.

While crust is baking, prepare filling. In same bowl of food processor (no need to wash out bowl) place brown sugar, corn syrup, eggs, melted butter. Pulse just until mixed. Stir in chocolate chips and walnuts by hand. Pour over baked crust. Return to oven and bake 30 minutes, until lightly browned and just set. Filling may still jiggle in the middle. Cool tart in pan. When completely cooled, cut into thin slices and serve with whipped cream which has been prepared by beating cream and 2 tablespoons granulated sugar until soft peaks form.

Serves 10

It's so easy to prepare, and yet decadent enough for special occasions. A little of this rich dessert goes a long way. Don't forget the whipped cream!
